Reopened in 2005 after a super-stylish makeover, we love the Hilton for two reasons: it has a fantastic location in the middle of the city, and for the mega baths/spas in the relaxation suites. But then there's also swanky Glass Brasserie, where celebrity chef Luke Mangan combines French techniques with the best local produce; and the ultra-cool Zeta bar, home to some of Sydney's yummiest (and most expensive) cocktails. And we can't forget the elegant Victorian-style Marble Bar - it's a Sydney institution and is heritage-listed to boot. The negatives? The only thing we can think of is the lack of scenic views, but hey, you can't have everything!
