Do you only have time for only one meal in Singapore? Do you want to try local specialties in swankier surrounds than a hawker centre? Then you've got to try the buffet at Straits Kitchen, the shiny new restaurant in the basement of the Grand Hyatt. The food focuses on the three main cuisines of Singapore: Chinese, Malay and Indian (and staff suggest you try them in that order). However, we think you should just dive in! Not to be missed is the popiah (Nonya-style spring rolls), satays, Singaporean laksa, beef rendang, grilled sting-ray, butter chicken, roti prata and tandoori prawns - we could go on and on. We also love all the little design flourishes: a wall of Chinese tea pots, a display of old black and white foodie photographs or a gigantic mortar and pestle filled with dried chillies. If you want to try everything you have to pace yourself, and afterwards you may not end up eating for a week. But it's worth it! And at $38 for lunch or dinner, we reckon it's a steal.
